Tip #4: Serve low-carbon food.
Cattle produce as much as 6 million tons of methane, a greenhouse gas, every year in the United States. When you add the energy needed to feed and transport the animals, those tender slices of filet mignon scarfed down at weddings have environmental rap sheets a mile long by the time they hit buffet tables. If you have a hankering for protein, chicken and sustainably-harvested fish (like Alaskan salmon and halibut) offer less carbon-intensive options. To go even greener, give starring roles to non-meat dishes packed with herbs, spices and vegetables. Ask caterers to keep a heavy emphasis on vegetarian dishes and opt for local and organic produce whenever possible.
